The classic South African sweet, sticky and moist sponge pudding. Best served warm with custard or ice cream.
Ingredients
For the pudding
- 300g Snowflake Creations Malva Pudding Mix
- 1 extra large egg
- 80ml cooking oil
- 200ml milk
- 2 apricot jam portions
For the sauce
- 50g butter/baking margarine
- 250ml milk/cream/evaporated milk
Method
- First bake the pudding...
- Preheat the oven to 180ºC
- Beat egg, oil, milk and jam, then add pudding mix
- Beat batter with a whisk until smooth and combined
- Pour batter into a greased 20 x 20 cm ovenproof glass dish
- Bake for about 25 minutes until golden
- ... then cook the sauce
- Melt butter/baking margarine in a saucepan, then add milk/cream/evaporated milk and brown sugar mix
- Bring to boil, then reduce heat and simmer for 5 minutes
- Pour hot sauce over pudding immediately after baking and serve warm
